Mix thoroughly but gently until just combined. Scoop out golf ball-sized meatballs (using an ice cream scoop or approximately 2 tablespoons) and roll in your hands to make them completely round.
  • Heat a large skillet (cast iron works best) over medium-high heat. Brown the meatballs in two batches to avoid overcrowding the pan. You want them to be evenly browned and form a nice crust, but they will not be cooked all the way through at this stage. Remove the browned meatballs from the pan and drain them on a paper towel-lined plate. Repeat with the second batch.
