Red Velvet and the holiday season share an undeniable magic. The vibrant crimson hue of Red Velvet desserts perfectly captures the festive spirit, making them a joyful addition to any celebration, especially Christmas. Recently, I found myself brainstorming for a fresh approach to using a classic red velvet cake mix. While red velvet cookies are always a hit, I was eager to create something new, something truly memorable. That’s when inspiration struck: a giant Red Velvet Cinnamon Roll Cake! This innovative recipe transforms a humble cake mix into a magnificent, soft, and utterly delicious cinnamon roll, perfect for sharing (or not!).

Instead of crafting individual cinnamon rolls, I envisioned one grand, impressive centerpiece. The genius of this recipe lies in how it leverages the rich flavor and stunning color of a red velvet cake mix. But here’s the real culinary marvel: by incorporating yeast and a few other key ingredients, that sweet cake mix magically transforms into a pliable, risen bread dough. This surprising twist means you get the comforting texture of a homemade cinnamon roll with the unmistakable, decadent taste of red velvet – all without the complexity of starting from scratch.

Crafting Your Beautiful Red Velvet Dough

Creating the dough for this giant cinnamon roll is surprisingly simple, thanks to the efficiency of rapid rise yeast. This particular type of yeast significantly cuts down on proofing time, making the entire baking process much more accessible for busy schedules. With just a quick first rise, you’ll witness the transformation of your ingredients into a vibrant, beautiful red dough – a feast for the eyes even before baking. The texture will be soft, elastic, and a joy to work with, setting the stage for the incredible flavors to come. This shortcut ensures that you can achieve bakery-quality results right in your own kitchen.

Assembling the Giant Red Velvet Cinnamon Roll Cake

Once your red velvet dough has completed its initial rise and has doubled in size, it’s time for the fun part: shaping! Turn the dough out onto a lightly floured surface and roll it into a large, uniform rectangle, just as you would for traditional cinnamon rolls. Aim for measurements around 15″x12″ to ensure you have enough surface area for the lavish filling. Speaking of filling, it’s a classic combination of softened butter, granulated sugar, and a generous sprinkle of cinnamon – a trio that promises irresistible aroma and flavor. Instead of rolling the entire rectangle of dough into one spiral, which is typical for individual rolls, this recipe takes a creative turn. You’ll cut the dough into long, wide strips. A pizza cutter works wonders for this, ensuring clean, even cuts that are essential for the unique assembly method.

For those who love a cinnamon roll packed with filling, I sometimes trim off the outer edges of the dough, which can be less flavorful, but this step is entirely optional. To begin building your magnificent cake, take one of the dough strips and place it in the center of a well-greased 9-inch round pie plate. Carefully roll this strip around itself to form a tight, initial spiral. Then, take a second strip and seamlessly continue the spiral, attaching it to the end of the first. Proceed in this manner, connecting each strip and rolling it around the growing center, until you’ve used all the dough and created one giant, cohesive cinnamon roll. A crucial tip here is to avoid rolling the strips too tightly; leave a little space between the spirals. This foresight allows the dough ample room to expand beautifully during its second rise and baking, resulting in a light, fluffy, and perfectly layered final product.

The Second Rise and Baking Perfection

After assembling, your giant red velvet cinnamon roll needs one more rest to reach its full potential. Cover the pie plate and let the roll rise for approximately 30 minutes in a warm place, or until it has visibly expanded in size. This second proofing is vital for achieving that wonderfully soft and airy texture that defines a perfect cinnamon roll. However, exercise caution: avoid over-rising the dough. If allowed to rise too much, the roll can become unstable and might even “explode” or bake over the sides of the pan in the oven, leading to a less-than-perfect appearance. A gentle, controlled rise is key to success. Once adequately risen, your masterpiece is ready for the oven, where it will bake to golden-red perfection, filling your home with an intoxicating aroma.

The Irresistible Cream Cheese Frosting

No red velvet dessert, especially a cinnamon roll, is truly complete without the luxurious touch of a classic cream cheese frosting. Its tangy sweetness perfectly balances the rich, subtle cocoa notes of the red velvet and the warmth of the cinnamon. This creamy topping elevates the entire experience, transforming a delicious pastry into an unforgettable indulgence. Whipping up this frosting is incredibly easy, requiring just a few common ingredients and a simple mix until smooth and velvety. Once your giant cinnamon roll emerges from the oven, slightly cooled but still warm, a generous blanket of this luscious frosting melts ever so slightly into the crevices, creating an exquisite finish that is both visually appealing and incredibly satisfying. The contrast between the warm, soft roll and the cool, sweet frosting is pure bliss.

Ingredients

  • 1 box Red Velvet Cake Mix
  • 2 envelopes Rapid Rise Dry Yeast
  • 2 1/2 cups warm water
  • 1 tsp vanilla extract
  • 5 cups all purpose flour

Filling

  • 1 stick butter {softened}
  • 1/2 cup granulated sugar
  • 1 1/2 tsp cinnamon

Cream Cheese Frosting

  • 4 oz cream cheese {softened}
  • 3 tbsp butter {softened}
  • 1/2 tsp vanilla extract
  • 1 cup powdered sugar

Instructions

  1. Combine both packets of yeast with warm water in mixer bowl and stir to dissolve. Add cake mix, flour, vanilla, and a pinch of salt. Use the dough hook to knead together dough for a couple of minutes until well combined and smooth. Cover the dough and let it rise in a warm place until it has doubled in size (this usually takes about 30-45 minutes with rapid rise yeast).
  2. Turn the risen dough out onto a lightly floured surface and roll it into a large rectangle, approximately 15″x12″. Evenly spread the softened butter over the entire surface of the dough. Sprinkle the butter generously with the granulated sugar and cinnamon mixture. Lightly spray a 9″ round baking pan with non-stick cooking spray. Using a sharp knife or a pizza cutter, cut the dough into 6 strips, each about 2″ wide. Begin assembling the cake by taking one strip and coiling it tightly around itself in the very middle of the prepared pan. Take a second strip and continue rolling, connecting it to the end of the first strip. Proceed with the remaining strips until the pan is full, ensuring you don’t pack the dough too tightly. It’s important to leave a little room for the dough to expand as it rises. Cover the assembled roll and let it rise for another 30 minutes in a warm spot (*see note below for quick rising tip).
  3. Once your giant cinnamon roll is adequately risen, preheat your oven to 350 degrees F (175 degrees C). Bake the roll for 30-35 minutes. If you notice the top browning too quickly during the last 15 minutes of baking, loosely cover the pan with aluminum foil. Remove the roll from the oven and allow it to cool in the pan for about 10 minutes before frosting.
  4. While the cinnamon roll is cooling slightly, prepare your cream cheese frosting. In a medium bowl, combine all the Cream Cheese Frosting ingredients (softened cream cheese, softened butter, vanilla extract, and powdered sugar). Mix with an electric mixer until the frosting is smooth, light, and fluffy. Spread the luscious frosting generously over the warm cinnamon roll. Serve immediately while warm, or store any leftovers covered at room temperature for up to 5 days.

Notes

  • If you’re looking to speed up the dough rising process, you can create a warm environment in your oven. Turn your oven on to 200 degrees F (95 degrees C). Once it reaches this temperature, immediately turn the oven off. Place your covered dough inside the warm, turned-off oven to rise. This warm, draft-free space will encourage quicker and more consistent proofing.
