Why Leftover Turkey Empanadas Are Your Next Post-Holiday Obsession

The beauty of leftover turkey extends far beyond a simple sandwich. While turkey might be the star of your holiday table, it can sometimes feel a bit repetitive in the days following. This empanada recipe offers a vibrant, exciting alternative that breathes new life into your holiday remnants. It’s a fantastic way to minimize food waste while maximizing flavor and enjoyment. The combination of succulent turkey with a rich, creamy filling and a crispy, buttery exterior creates a culinary experience that’s both comforting and gourmet.

What makes this recipe particularly appealing is its simplicity. Many of the ingredients for the filling are likely already staples in your pantry or refrigerator, especially after a big holiday meal. The inclusion of cream cheese in the filling is a game-changer, imparting a smooth, luxurious texture that perfectly complements the savory turkey. It’s a dish that feels sophisticated yet is surprisingly easy to prepare, making it ideal for those relaxed days after the holiday rush.

We’ve all had those moments where we’re staring at a mountain of turkey, wondering how to make it exciting again. These empanadas answer that call, turning a potential chore into a delightful cooking project. They are perfect as a light lunch, a satisfying snack, or even a fun appetizer for unexpected guests. The contrast between the tender, spiced filling and the delicate, crisp pastry is truly remarkable and will leave everyone reaching for another.

The Secret to a Flaky Crust: Mastering Puff Pastry for Empanadas

When it comes to crafting the perfect empanada, the crust plays a pivotal role. In the past, many recipes might have called for refrigerated pie crust, which certainly gets the job done. However, for this particular recipe, we’re taking a significant step up by utilizing puff pastry dough, and trust me, it’s a decision you won’t regret. Once you experience the magic of puff pastry in your empanadas, you’ll find it hard to go back to anything else.

Puff pastry is renowned for its incredible layers of buttery goodness that bake up incredibly light, airy, and exquisitely flaky. This delicate texture provides a sublime contrast to the hearty, creamy turkey filling. Each bite offers a delightful crunch followed by a tender, melt-in-your-mouth experience that simply cannot be replicated with a standard pie crust. It transforms a simple leftover dish into something truly extraordinary, adding an element of elegance and sophistication.

Working with puff pastry is also surprisingly straightforward. It comes pre-made and frozen, requiring only a simple thawing process before it’s ready to be shaped. This convenience allows you to achieve bakery-quality results without the extensive effort of making dough from scratch. The many layers within the pastry create pockets of air that expand during baking, resulting in that characteristic “puff” and irresistible flakiness that makes these empanadas an absolute showstopper.

Preparing Your Puff Pastry Dough for Empanada Perfection

To begin, ensure your puff pastry sheets are thoroughly thawed. This usually takes about 30-40 minutes at room temperature, or overnight in the refrigerator. Once pliable, carefully unfold the sheets and lay them out onto a lightly floured, flat surface. Be gentle when handling puff pastry to maintain its delicate layers.

Thawed puff pastry sheet laid flat on a cutting board, ready for shaping into empanada crusts.

Using a 4-inch round cookie cutter, carefully cut out circles from each sheet. A typical package contains two sheets, yielding approximately four circles per sheet, for a total of eight rounds. If you don’t have a round cookie cutter, don’t fret! You can easily cut the dough into squares or even triangles using a knife. The shape doesn’t impact the incredible flavor, only the aesthetic. Ensure you maximize the dough by cutting as many shapes as possible.

Don’t discard the leftover puff pastry scraps! They are far too delicious to waste. You can gently gather and re-roll them once or twice to cut out additional shapes, although the subsequent rounds might not puff quite as dramatically. Alternatively, these scraps are fantastic for making other treats. For instance, they can be used to create these Easy Baked Churros, or savory twists with a sprinkle of cheese and herbs. It’s a great way to ensure every bit of that wonderful flaky dough is enjoyed.

Crafting the Creamy, Flavorful Leftover Turkey Empanada Filling

The heart of these empanadas lies in their incredibly savory and creamy filling. What makes this recipe particularly brilliant is its reliance on ingredients you likely already have on hand, especially after a holiday feast. We’re aiming for a filling that’s rich in flavor, perfectly balanced, and boasts a wonderfully smooth texture. The star ingredient, beyond the turkey itself, is cream cheese, which truly transforms the filling into a decadent delight.

Cream cheese doesn’t just add creaminess; it also contributes a subtle tang that brightens the overall flavor profile, ensuring the filling isn’t too heavy. Combined with aromatic onions, zesty green chilies, a hint of your favorite salsa, and the warm notes of taco seasoning, this filling becomes a complex and utterly satisfying experience. It’s designed to complement the turkey without overpowering it, making every bite a harmonious blend of textures and tastes.

This filling is also incredibly versatile. While we’re focusing on leftover turkey, the base flavors would work beautifully with shredded cooked chicken, making this recipe a year-round option. The magic truly happens when all these simple ingredients come together in a skillet, melting and melding into a cohesive, irresistible mixture that will be eagerly devoured inside those flaky pastry pockets.

Step-by-Step Filling Preparation for Maximum Flavor

Begin by heating one tablespoon of oil in a skillet over medium heat. Olive oil works wonderfully for its flavor, but any neutral cooking oil like vegetable oil will also suffice. Once the oil is shimmering, add one-quarter of a small onion, finely chopped. Sauté the onion gently, stirring occasionally, until it softens and becomes translucent, releasing its sweet aroma. This step is crucial as it forms the aromatic base for our flavorful filling.

Next, it’s time to introduce the main ingredients. Add one cup of finely chopped leftover turkey to the skillet, along with two ounces of cream cheese (softened is best for easy melting) and a generous tablespoon of green chilies. The green chilies add a subtle warmth and a touch of smoky flavor without overwhelming heat, but you can adjust the amount based on your preference for spice.

Stir the mixture continually, allowing the cream cheese to melt thoroughly and coat the turkey and onions. Your goal is a smooth, creamy texture where all ingredients are well combined. This is where the “creaminess” factor of our empanadas truly develops. Once the cream cheese has melted, add two heaping tablespoons of your favorite salsa. Whether you prefer mild, medium, or hot, the salsa will add a burst of fresh, vibrant flavor and moisture to the filling.

Finally, stir in one teaspoon of taco seasoning. This spice blend will tie all the flavors together, adding a savory depth that makes the filling irresistible. Continue stirring until the taco seasoning is fully incorporated, ensuring an even distribution of flavor. Once combined, remove the skillet from the heat and allow the filling to cool slightly. A slightly cooled filling is easier to handle and prevents the puff pastry from becoming soggy during assembly.

How to Assemble Your Irresistible Leftover Turkey Empanadas with Puff Pastry

Assembling your empanadas is a fun and straightforward process that brings all our delicious components together. Start by placing the eight rounds of puff pastry dough onto a silicone baking mat or a parchment-lined baking sheet. Ensuring they are spaced adequately will allow them to puff up beautifully without sticking.

Now for the filling! Place a generous tablespoon, or a little more, of the cooled turkey filling onto the center of each puff pastry round. Remember, the key here is not to overfill. While it might be tempting to load up each empanada, too much filling will make it incredibly difficult to seal the edges properly. An improperly sealed empanada can lead to the delicious filling oozing out during baking, which nobody wants!

After placing the filling, sprinkle a small amount of shredded cheese over the top of the turkey mixture. This adds another layer of cheesy goodness that melts perfectly inside the pastry as it bakes. Any melty cheese like cheddar, Monterey Jack, or a Mexican blend would work wonderfully here.

Carefully fold one half of the puff pastry round over the filling to meet the other edge, forming a semi-circle. Gently press the edges together with your fingers to start the seal. Then, take the tines of a fork and firmly press them along the entire curved edge of each empanada. This action not only creates a decorative crimped pattern but, more importantly, ensures a secure seal. Press down firmly enough to visibly indent the dough, making sure the two pastry layers are fused together. A good seal is paramount to keeping all that delicious filling locked inside during baking.

Once sealed, use the same fork to poke a couple of small holes in the top of each empanada. These tiny vents are essential! They allow steam to escape from the filling as the empanadas bake, preventing them from bursting open and ensuring the pastry cooks evenly and achieves maximum puffiness.

For that irresistible golden-brown hue and a subtle sheen, an egg wash is your best friend. Whisk one egg with one teaspoon of water in a small bowl until well combined. Then, using a pastry brush, lightly and evenly brush the egg wash over the top surface of each empanada. This simple step contributes significantly to the beautiful, appetizing color and crisp texture of the finished product, making them look as good as they taste.

Baking to Golden Perfection and Serving Suggestions

With your beautifully assembled empanadas ready, it’s time to bake them to golden, flaky perfection. Preheat your oven to a hot 450°F (232°C). The high temperature is crucial for puff pastry, as it creates a rapid burst of steam that lifts the layers, resulting in that signature airy and flaky texture we’re aiming for. Place your baking sheet with the empanadas into the preheated oven.

Bake for approximately 20-25 minutes. Keep a close eye on them during the last few minutes, as ovens can vary. You’ll know your Leftover Turkey Empanadas are perfectly baked when they are gorgeously golden brown all over and have puffed up significantly, showcasing their magnificent layers. The rich, inviting aroma filling your kitchen will be another delightful indicator that they are nearly ready to enjoy.

These turkey empanadas are undoubtedly best served warm, straight out of the oven. The flaky crust and creamy filling are at their peak when hot. They make an excellent appetizer, a delightful brunch item, or a satisfying light meal. Consider serving them with a side of extra salsa, a dollop of sour cream, or a fresh guacamole for dipping. A simple green salad would also make a wonderful accompaniment, cutting through the richness of the pastry and filling.

If you happen to have any leftovers (which is unlikely!), these empanadas can be stored in an airtight container in the refrigerator for up to three days. To reheat, simply pop them into the microwave for a minute or two until warm, or for a crispier crust, reheat them in a toaster oven or conventional oven at a lower temperature (around 300°F/150°C) until heated through and re-crisped. While this recipe is fantastic for Thanksgiving turkey, don’t limit yourself! You can easily substitute cooked, shredded chicken in the filling, making these delicious empanadas a year-round favorite for any occasion.
