Light and fluffy colorful pancakes, stacked in a rainbow and topped with plenty of butter and warm maple syrup. This easy recipe makes a festive breakfast for any celebration!

Ingredients

  • 2 eggs
  • 1 1/4 cups milk
  • 3 tbsp vegetable oil
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 2 tbsp granulated sugar
  • 1-2 drops liquid food coloring (for each of 4 different colors)

Instructions

  1. In a large bowl, whisk the eggs and milk vigorously until the mixture is light and foamy, approximately 1 minute. Stir in the vegetable oil and set the wet ingredients aside.
  2. In a separate medium bowl, whisk together the dry ingredients: flour, salt, baking powder, and sugar. Ensure everything is evenly distributed and there are no large lumps of flour. This helps achieve an even texture and rise.
