Instructions

Cookie Cups

  • Preheat oven to 350°F (175°C). Prepare a mini muffin pan by generously spraying each cup with non-stick cooking spray. Pour the chocolate cake mix into a medium bowl and whisk (or sift) to remove any lumps. Add the softened butter and whisked eggs to the cake mix and combine with a hand-held mixer until the dough is thick and sticky. Using a small cookie scoop (or 1/2 tbsp.), place a mound of cookie dough into each muffin cup. Use your fingers to gently press the mound of dough down to create a level cookie base. Bake for 8-9 minutes. (Do not overcook, as they will set up further as they cool.) Remove from the oven and let the cookies cool in the pan for 3-4 minutes. While still warm, run a knife around the edges of each cookie to loosen them. Transfer the cookies to a cooling rack and let them cool completely.

Cookie Dough Filling

  • In a bowl, cream the softened butter and brown sugar together on medium speed until light, fluffy, and well combined. Add in the vanilla extract, flour, and salt. Mix until just incorporated.
