Ingredients

Cake

  • 1 box lemon cake mix {13.25 ounces}
  • 3 large eggs
  • ¼ cup vegetable oil
  • 1 cup milk {we used 1%}
  • ¼ cup sour cream
  • 1 teaspoon lemon zest

Chocolate Ganache

  • 1 cup milk chocolate chips
  • ¼ cup heavy cream

Instructions

  • Preheat your oven to 350°F (175°C).

Cake

  • Combine lemon cake mix, eggs, vegetable oil, milk and sour cream in a large bowl. Use an electric mixer to blend the ingredients together until you have a smooth, lump-free batter. Stir in the lemon zest.
  • Liberally spray the bundt pan with nonstick cooking spray. Pour the prepared batter into your greased pan. Bake for 35-40 minutes or until a toothpick inserted into the center of the cake comes out with only a few moist crumbs.
  • Allow the cake to cool in the pan for 10 minutes. Then, carefully invert it onto a wire rack to cool completely.

Chocolate Ganache

  • Combine milk chocolate chips and heavy cream in a microwave-safe bowl. Microwave for 30 seconds. Whisk until smooth. If still chunky, microwave in 15-second intervals, whisking after each, until smooth. Add enough heavy cream for a smooth, spoonable consistency if needed.
  • Evenly pour the chocolate ganache over the top of the cooled cake. Garnish with extra lemon zest if desired. Allow the ganache to set up and then serve. Store in an airtight container at room temperature for 2-3 days or in the refrigerator for up to 4 days.

Notes

If you prefer a darker chocolate flavor, you can use dark chocolate chips or semi-sweet chocolate chips instead of milk chocolate chips for the ganache.

For an even more intense lemon flavor, consider adding an extra tablespoon of fresh lemon juice or lemon extract to the cake batter along with the lemon zest. You can also brush the cooled cake with lemon syrup (equal parts lemon juice and sugar, heated until dissolved) before pouring on the ganache for an extra burst of citrusy goodness.
